Cuddureddi di Ricotta (Sicilian Christmas Cookie)

Cuddureddi are a classic Sicilian Christmas cookie. Because they are fried, they are best eaten immediately.

  • 2 cups flour
  • 1 cup sugar
  • 3 egg yolks
  • 1 1/2 cups ricotta, drained
  • Grated rind of 1 orange
  • 1 teaspoon cinnamon
  • 3/4 teaspoon rum flavoring
  • 1/4 cup honey

 

 

METHOD

Mix together flour, sugar, egg yolks, ricotta, orange zest, cinnamon and rum flavoring. Combine well.

This is a sticky dough. You can attempt to roll it, but the authentic Sicilian method is to break off piece (about one heaping tablespoon and roll between the palms of the hand into the shape and size of a finger.

Fry in generous amount of bubbling oil, a few pieces at a time. Turn once, remove with slotted spoon and place to drain on paper towel.

Coat each piece on top with honey.

Yield: About 2 - 3 dozen
