Pumpkin Cookies

These cookies aren't too sweet. With nuts, pumpkin and raisins, they are nutritious treats, especially at Halloween when too many sweets abound.

  • 1/2 cup butter, softened
  • 1/3 cup brown sugar, firmly packed
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1 1/2 cups cooked pumpkin, mashed
  • 2 1/2 cups flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 cup golden raisins
  • 1/2 cup pecans, finely chopped

 

 

 

METHOD

Preheat oven to 375° F.

In a large bowl, cream together butter and brown sugar. Add eggs and mix thoroughly. Stir in vanilla and pumpkin.

Sift together flour, baking powder, salt, cinnamon, nutmeg and cloves. Add slowly to butter mixture. Mix until thoroughly combined.

Fold in raisins and chopped pecans.

Butter cookie sheets. Using a teaspoon, drop dough in rounded spoonsful on cookie sheets. Leave space for cookies to expand.

Bake in preheated 375° F oven until lightly browned, about 15 minutes.

When browned, remove to wire racks to cool.

Yield: About 4 dozen cookies.
