Lebkuchen

"Little spicy honey flavoured bars called "Lebkuchen" are easy and tasty. This recipe was given to me by a German friend, Yvonne Trautmann, a legendary cook." Meryl Grebe

  • 5 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 cup chopped almonds
  • 2 cups clear honey
  • 1/2 teaspoon powdered cloves
  • 1/2 teaspoon cinnamon
  • 1 cup mixed candied fruit
  • 2 tablespoons chopped glace cherries

Icing

  • 2 egg whites
  • 1 1/2 cups confectioners sugar
  • 1 tablespoon lemon juice
 

METHOD

Mix all the ingredients except the honey together in a large dish.

Heat the honey unti it thins. Do not boil.

Add to dry ingredients and knead well until smooth. Roll out dough to a thickness of 1/2 inch and place on a greased, floured baking tray.

Bake in a preheated oven (350 degrees) for 20-25 minutes.

Whilst Lebkuchen is baking, prepare a glace icing. Whip egg whites until they for soft peaks. Add sugar and lemon juice. Beat until thick, smooth and glossy.

Spread icing on Lebkuchen whilst still hot, then cut into little rectangles and watch the kids enjoy a taste of Christmas in Germany!
