Italian Holiday Cookies

These cookies use preserves - homemade is always best! The recipe comes from the luscious Jamlady Cookbook.There are lots of cookie recipes in the book.

  • 1/2 cup butter (1 stick)
  • 1/3 cup sugar
  • 1 egg yolk
  • 1/4 teaspoon vanilla
  • 1 1/4 cups flour
  • 1/2 teaspoon salt
  • 1 egg white, slightly beaten
  • 1 cup flaked coconut
  • Assorted preserves
 

METHOD

Cream the butter; add the sugar. Add the egg yolk and vanilla. Beat. Gradually add the salt and flour. Chill the dough for ease in handling. Preheat the oven to 300 degrees F. Make 1 inch balls, dip them in egg white, and roll them in coconut. Place the dough balls on an ungreased baking sheet, or on no-stick foil on a cookie sheet, and press a thumbprint in each cookie. Bake for 20 - 25 minutes. Add the preserves for the last 5 minutes of baking.
