Method
Preheat oven to 375°F.
Cream butter and sugar together in large bowl.
Beat in eggs, and when mixture is combined, stir in zucchini and lemon peel.
In a separate bowl, sift flour, baking soda, baking powder, cinnamon and salt.
Working gradually, add flour mixture to the butter mixture. When blended, add raisins and walnuts.
Drop by tablespoonfuls onto lightly greased cookie sheets. Bake in preheated 375°F oven for 8-10 minutes or until tops become a golden-brown. Using a spatula, put on wire racks to cool.
Glaze: combine sugar
and orange juice. This should have a fairly thin consistency. When cookies have cooled, spread on tops of cookies.
