Molasses Raisin Cookies

  • 1 cup shortening
  • 1/2 lb. light brown sugar
  • 1 pint dark molasses
  • 1 pint buttermilk
  • 6 cups flour
  • 1 tablespoon baking soda
  • 1 teaspoon powdered ginger
  • 1 teaspoon cinnamon
  • 1/2 cup raisins, plumped in water for 20 minutes, drained and dried

 

 

Method

Preheat oven to 375 degrees F.

Cream shortening and sugar. Add molasses and buttermilk. Mix together flour, baking soda a, ginger and cinnamon.  Stir into wet mixture.  Stir in raisins.

Drop in large dollops from teaspoon onto cookie sheet. Bake in preheated 375 degree F. oven for 8-10 minutes.

Yield: about 8 dozen
