Macadamia Nut Cookies

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar (packed)
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 1/2 oz macadamia nuts, chopped
  • 12 ounces chocolate chips
  • 6 ounces Vanilla baking chips

 

 

Method

In a mixing bowl, cream butter and sugars. Add eggs and vanilla.  Beat on medium speed for 2 minutes.

In a separate bowl combine flour, baking soda and salt. Add to creamed mixture and beat for 2 minutes.

Stir in nuts and chips. Cover and refrigerate several hours or overnight.

Preheat oven to 375°F.

Drop dough by tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake in preheated 375° F. oven for 10-12 minutes or until golden brown.

Cool on pans for 1 minute before removing to wire racks where they will cool cool completely.

Yield: About 6 - dozen cookies
