Creamy Cocoa Squares

Wonderful during the Christmas and Thanksgiving holidays.  Also nutritious!

  • 1 cup whole wheat pastry flour
  • 1/2 cup oat bran
  • 1/2 cup oat flakes
  • 1/2 cups slivered almonds
  • 3/4 cup tahini
  • 2 tablespoons rice syrup combined with 2 tablespoons water
  • 1 cup tofu
  • 1/2 cup ricotta cheese
  • 1/3 cup cocoa
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla
 

Method

Preheat oven to 350° F.

Combine first six ingredients to form a crumbly, but adhesive mixture. If the mixture does not adhere, add a little oil, a few drops at a time to not overdo. Set aside.

Beat together all remaining ingredients.  Place half of crumb mixture in an oiled 9" x 12" pan, then press down well. Cover with cocoa mixture, then layer on another crumb mixture with remaining half.  Bake in preheated 350° F. for 30-35 minutes or until golden.  Cool on a wire rack.  When cool enough to work with, but still a little soft, cut into squares.
