White Chocolate Fudge Bars

Wonderfully moist with a touch of vanilla, these white chocolate fudge bars are a change from the usual chocolate bars.

  • 1 1/2 cups all-purpose flour
  • 12 tsp. baking soda
  • 1/2 cup (1 stick) sweet butter
  • 3 ounces white chocolate
  • 2 eggs
  • 2 cups superfine sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup (2 oz.) chopped toasted hazelnuts
  • 1/2 cup (3 oz.) white chocolate chips
 

Method

Preheat the oven to 350°F (175°C).  Line a 9 x 13-in. - (23 x 33 cm.) deep pan with parchment.  Sift the flour and baking soda together in a bowl.  Melt the butter and white chocolate in a heatproof bowl over a saucepan of simmering water, or in the microwave on a low heat.

In a separate bowl, beat the eggs until foamy, then beat in the sugar until well-blended.  Stir in the melted chocolate, butter, and vanilla.

Add the dry ingredients and spoon into the pan.  Level the surface and sprinkle with the chocolate chips.  Place the pan on a baking sheet and bake for 25 to 30 minutes.  Remove from the oven, allow to cool in the tray for 10 minutes, then invert onto parchment on a wire tray and cool for 30 minutes.  Invert onto chopping board and cut into bars.  When completely cool, store in an airtight container for 5 to 7 days.
