Blueberry Scones

We love blueberries and we love scones. Put together, they are very satisfying and oh, the glorious amount of nutrition in blueberries.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • 1 cup skim milk
  • 1 cup fresh blueberries
 

METHOD

Preheat oven to 350°F.

Combine flour, baking powder, salt and sugar. Using a fork, stir to mix. Still using fork, stir in skim milk and mix until dough is rough and slightly sticky.

Working on a lightly floured surface, knead dough a few times, turning once or twice. Divide in half.

With the heel of the hands, (never the warm palms) pat each piece into circles about 10" round. Pour blueberries on one circle and place the other circle on top. Spray with butter-flavored nonstick cooking spray and sprinkle with sugar. Cut into 10 wedges and put on lightly greased baking sheet. Leave one inch between pieces.

Bake in preheated 350°F oven for about 12 minutes until golden brown.

Serves: 10
