Kenny's Zucchini Bread

This is one of the essays written as a school project in the Nassakeag Elementary School. Part of a an study on immigration and heritage, the students outdid themselves and raised money for the hungry. Please read from our kitchen to theirs. Each recipe is presented as written by the students. We commend each one for their excellence.

  • 3 eggs
  • 1 cup of salad oil
  • 2 1/2 cups of sugar
  • 2 cups of grated zucchini
  • 2 teaspoon of cinnamon
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 3 cups of flour
  • 1 cups of chopped walnuts

 

 

METHOD

In a bowl, beat eggs until foamy; gradually beat in oil and sugar. Add grated zucchini, cinnamon, salt, baking soda, and baking powder, mixing well. Gradually blend in flour, mixing well after each addition. Fold in chopped walnuts. Pre-heat oven to 350 degrees. Bake one hour. Yield: 1 large zucchini bread
