Crackling Bread

This calls for crackling, but you can substitute crisp, crumbled bacon. Be sure to get your skillet hot - this will give you the brown crust so valued by southerners.

  • 1 1/2 cups cornmeal
  • 4 tablespoons flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup cracklings (or crisp, crumbled bacon)
  • 1 egg
  • 1 1/2 cups buttermilk
  • 1 tablespoon bacon fat, melted




Preheat oven to 450°F.

Sift dry ingredients together and stir in cracklings.

Beat egg in buttermilk and add to mixture. Heat melted fat in hot skillet. Pour batter into hot skillet.

Bake in preheated 450°F oven until brown.

Serves: 12
