Cheese Scones

Scones are classic to accompany an afternoon tea, but are lovely for breakfast as well.

  • 6 ounces self-raising flour, sifted (1 cup plus 2 tablespoons)
  • A pinch salt
  • 1 teaspoon dry mustard
  • 1/2 teaspoon of cayenne pepper
  • 2 ounces margarine
  • 3 ounces of grated cheese
  • 1 egg, beaten

 

 

METHOD

Preheat oven to 425°F (210°C).

Put sifted flour, salt, dry mustard and cayenne in a bowl. Rub in margarine with fingertips. Tip in grated cheese and mix in beaten egg with a wooden spoon. If mixture is too dry add a little milk to make nice firm dough.

Tip out onto a floured board and press lightly with the palm of the hand until the dough is about one inch thick. Cut into rounds with a cutter and place these on a greased baking sheet. Sprinkle each one with a little grated cheese and cook in a preheated 425° F (210° C) oven for about 10 minutes, when they should be a lovely golden brown.
