Banana Pineapple Bread

  • 3 cups flour, sifted and measured
  • 2 cups sugar
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 3 eggs
  • 1 cup oil
  • 2 teaspoons vanilla
  • 1 (15 1/4 oz.) can pineapple (keep juice)
  • 2 cups medium-ripe bananas, chopped
  • 1 cup pistachios, chopped
 

Preheat oven to 350°F.  Grease a ten inch tube pan.

In a large mixing bowl, lightly blend flour, sugar, soda salt and cinnamon.

In a separate bowl beat eggs until fluffy. Stir in oil and vanilla.  Mix to blend. 

Pour liquid mixture into the flour mixture.  Stir until blended.  Do not use an electric mixer as you will overblend.  At no time in preparing this recipe should you work the batter too much. 

Stir in pistachios and pineapple. Follow this with bananas.  Stir just to combine.

Spoon into pan. Bake in preheated 350°F oven for about 1 hour, 20 minutes or until toothpick inserted in center comes out clean. Check cake after one hour.
