Bread Pudding with Banana

Bread pudding is comfort food. This recipe has lots of healthy ingredients and the tasty addition of banana. Heidi uses whole grain bread which makes it even healthier.

  • 5 slices whole grain or white bread, thickly sliced
  • 2 tablespoons unsalted butter
  • 1/4 cup dried apricots, soaked 20 minutes in water
  • 2 bananas, sliced (vary thickness of slices for a nice texture)
  • 1/3 cup raisins
  • 2 tablespoons sugar click for note
  • 1/2 teaspoon cinnamon
  • 2 eggs, beaten
  • 1 1/2 cups milk
 

METHOD

Preheat oven to 350°F.

Cut crusts off bread. Thinly butter each slice and cut into 4 squares.

Chop apricots and mix with bananas and raisins. Place half the fruit mixture into a 2 pint ovenproof dish. Set aside remaining half.

Mix together sugar and cinnamon. Sprinkle a third over fruit mixture.

Cover with half of the bread. Spread on remaining fruit mixture and another third of the cinnamon sugar. Place remaining bread on top with buttered side up.

Mix eggs and milk together until well combined. Pour over bread and sprinkle with remaining sugar.

Bake in a preheated 350°F oven for 35-40 minutes.

Serves: 4 - 6

Note: You can add more sugar, depending on preference. Some puddings call for 2 cups!
