Jen's Irish Soda Bread

This is one of the essays written as a school project in the Nassakeag Elementary School. Part of a an study on immigration and heritage, the students outdid themselves and raised money for the hungry. Please read from our kitchen to theirs. Each recipe is presented as written by the students. We commend each one for their excellence.

  • 3 Tablespoons margarine or butter, softened
  • 2 1/2 cups flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/3 cups raisins
  • 3/4 cup buttermilk

 

 

METHOD

Mix margarine into flour, sugar, baking soda, baking powder and salt until mixture is fine crumbs. Stir in raisins and enough buttermilk to make a soft dough.

Preheat oven to 375°F.

Turn onto lightly floured surface; knead until smooth, 1 to 2 minutes. Shape into round loaf, about 6 1/2 inches in diameter. Place on greased cookie sheet. Cut an X about 1/4 inch through loaf with floured knife. Bakein preheated 375° oven until golden brown - about 35-45 minutes. Brush with margarine.
