Tofu-Dill Dip

Miso is a salty product, so be careful when adding salt. We have used salt instead of soy sauce in this recipe as the soy color may darken the dip. If you don't mind, go for soy sauce.

  • 1 pound silken tofu
  • 1 garlic clove, minced
  • 1 tablespoon yellow miso
  • 2 tablespoons fresh dill,minced
  • 1 1/2 tablespoons freshly squeezed lemon juice
  • 3 scallions with green tops, sliced
  • 1 teaspoon salt if necessary.
 

METHOD

Put tofu, garlic, miso and lemon juice into a food processor. Blend on high speed, pulsing, to mix well. Reserving a few scallion greens for garnish, add dill and scallions. Process just to mix.

Serve with any assortment of crudites.

Yield: About 1-1/2 to 2 cups
