Sephardic Charoseth

Charoseth is traditional at Passover, a sweet dish to accompany the taste of bitter herbs. Symbolically, it uses fruits from Israel in biblical times.. This is a Sephardic version.

  • 1/2 cup ground walnuts
  • 1 cup raisins
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dried figs
  • 1/4 cup sugar
  • 2 teaspoons cinnamon
  • 1/3 cup Malaga wine
 

METHOD

Mix together walnuts, raisins, apricots, prunes, figs, sugar and cinnamon. Put together in a saucepan and cover with water.

Bring to boil. When boiling, lower immediately to a simmer. Simmer uncovered, stirring occasionally for about 45 minutes. You want to reduce the water substantially. Remove from heat add wine. Cool before serving.
