Hot Mango Chutney

Mango is one of the world's most popular fruits. It's been around so long no one is sure of its origin.Try it with the heat of chiles.

  • 1 1/2 pounds mango, not quite ripe, peeled and pitted
  • 1 lime, sliced
  • 2 fresh red chilies, seeded 7 chopped
  • 1 cup white wine vinegar
  • 3/4 cup light brown sugar
  • 1 teaspoon salt
  • 1/4 teaspoon green cardamom, ground
  • 1/8 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon turmeric
 

METHOD

Chop mango into 3/4 inch chunks . Put in a non-reactive saucepan with limes and chiles. Pour vinegar over all and bring to a boil.

When boiling, lower heat and simmer until mango is tender, about 12 - 15 minutes. Stir in sugar & salt.

Continue to stir until sugar is dissolved, then simmer until liquid is almost cooked away, about 45 minutes to 1 hour.Stir in spices to cook in mixture for last 15 minutes.

Yield: about 1 pint
