Kouclas

This is part of the recipe for adafina. Dafina may include a "centerpiece" ingredient, such as a giant meatball made from ground lamb, or this dumpling called kouclas. The dumpling is usually made from bread, but may also be made from matzo meal during Passover. Some dafina recipes call for calves' or lambs' feet or tongues as the central ingredient.

  • 1 cup bread crumbs
  • 1 large yellow onion, chopped (about 3/4 cup)
  • 3 large eggs
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons all-purpose flour
  • Salt to taste
 

METHOD

Combine all the ingredients. Wrap loosely in a piece of cheesecloth or aluminum foil and tie securely.

Cook as directed in Adafina
