Tomatillo Salsa

Serrano peppers may be used almost interchangeably with jalapenos, but their seeds are harder to remove. Left alone, they contribute heat to a finished dish.

  • 1 pound tomatillo
  • 1 serrano pepper (see note)
  • 3 cloves garlic, minced
  • 1 bunch cilantro, chopped
  • 1 medium onion, chopped
  • Salt and freshly milled black pepper to taste
 

METHOD

Husk and quarter tomatillos.

Place ingredients into food processor, reserving a little onion and cilantro to garnish. Process until blended. Season to taste.

Remove to serving bowl and garnish.

Serves: 8 - 10
