Indian Tamarind-Mint Chutney

This recipe, an authentic Indian recipe, is to cool you down more than to heat you up. Refreshing.

  • 2 pounds fresh mint leaves, stemmed
  • 2 teaspoons tamarind juice
  • 3 teaspoons plain yogurt
  • 1 small garlic, pressed through a press
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
 

METHOD

Crush mint leaves in food processor. When partially pulverized, add remaining ingredients. Pulse to mix well.

Yield: About 1 cup
