Papaya Chutney

This recipe for papaya chutney comes from the Gujarat region of India.

  • 1 small papaya peeled and roughly grated
  • 2 teaspoons vegetable oil
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon mustard seeds
  • 3 green chilies , minced
  • 1 1/2 teaspoons sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cilantro (coriander) finely chopped
  • Salt to taste
 

METHOD

Peel papaya. Grate, using coarse side of a grater. Set aside.

Heat oil in a heavy skillet. Put in cumin and mustard seeds. They will begin to sizzle and splutter. Allow to sizzle for one minute.

Mix in chilies, stir and papaya. Stir to blend. Turn off heat and mix in all remaining ingredients tasting for correct amount of salt. Let cool.
