Olive and Orange Relish

What a wonderful combination - oranges and black olives.

  • 2 small oranges, peeled, seeded and cut in 1/2 inch pieces
  • 1/2 cup red onion, roughly chopped
  • 1/2 cup cured black olives, pitted
  • 1/4 cup cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons olive oil
  • Salt and freshly milled black pepper to taste
 

METHOD

Put all ingredients into a medium bowl. Toss gently, but thoroughly, to blend. Serve immediately.

Yield: About 2 - 3 cups
