Mango, Melon & Jicama Salsa

If you have different types of melon available to you, combine a little of each. As with any salsa recipe this is accepting of variations.

  • 1 medium mango, peeled & pitted
  • 1 jalapeño pepper, seeded, and minced
  • Juice of 2 small limes
  • Grated zest of 1 lime
  • 1/4 cup red bell pepper, diced
  • 1-1/2 cups cantaloupe, diced
  • 1 small pickling cucumber, peeled, seeded, diced
  • 1⁄2 of one small jicama, peeled & diced
  • 1/4 cup cilantro, chopped
  • Salt and lots of black pepper, to taste
  • 1/4 cup sour cream
 

METHOD

Puree the mango in a blender or food processor. When smooth, put in jalapeño, lime juice and lime zest. Pulse just to combine.

Remove mango mixture to a mixing bowl. Stir in all ingredients.

Serves: 6 - 8
