Mango, Melon & Jicama Salsa
If you have different types of melon available to you, combine a little of each. As with any salsa recipe this is accepting of variations.
- 1 medium mango, peeled & pitted
- 1 jalapeño pepper, seeded, and minced
- Juice of 2 small limes
- Grated zest of 1 lime
- 1/4 cup red bell pepper, diced
- 1-1/2 cups cantaloupe, diced
- 1 small pickling cucumber, peeled, seeded, diced
- 1⁄2 of one small jicama, peeled & diced
- 1/4 cup cilantro, chopped
- Salt and
lots of black pepper, to taste
- 1/4 cup sour cream
