Grilled Corn Salsa

When you're out at the grill, throw on a few extra ears of corn and save to make this delicious salsa.

  • 2 pounds corn
  • 1 red bell pepper
  • 1 red onion, diced
  • 1 bunch cilantro
  • 1 jalapeno chili, deseeded and minced
  • 2 cloves garlic, minced
  • 2 tablespoons rice wine Vinegar
  • 4 tablespoons olive oil
  • Salt and freshly milled black pepper to taste
 

METHOD

Grill corn in husk when using the grill. Remove kernels when cooled. Grill peppers and peel. If making immediately, let cook slightly.

Prep vegetables and combine in bowl. Sprinkle on oil and vinegar and season to taste. Mix well. This is excellent when it is used the next day and the flavors have blended.

Serves: 4
