Citrus Jalapeno Salsa

Please use the freshest of scallions with the liveliest green tops for this recipe.

  • 2 jalapeno chiles, seeded and minced
  • Grated zest of 1 orange
  • 1 garlic, pressed through garlic press
  • 3 oranges, peeled and segmented
  • 1 pink grapefruit, peeled and segmented
  • Juice of 1 lime
  • 2 tablespoons vegetable oil
  • Salt to taste
  • 1 tablespoon corn syrup
  • 2 scallions, green part only, finely sliced
 

METHOD

In a small bowl, combine chiles, orange zest and garlic. Using the back of a spoon, press together to blend tastes. Do not press so hard it becomes a paste. You are after the 'marriage' of flavors. Add oil, salt and corn syrup, and stir to combine.

Cut orange and grapefruit pieces in a bowl. Pour oil and chile mixture over all and stir gently to mix. When ready to serve, put in small bowl and garnish with scallion tops.

Yield: About 2 cups
