Chili Butter for Corn on the Cob

What zest this gives to the summer barbecue. This chili butter recipe is both simple and versatile.

  • 4 tablespoons butter, softened
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon light brown sugar
  • 1/8 teaspoon cayenne pepper
  • 6-8 ears fresh corn, husked
 

METHOD

Preheat grill.

In a small bowl, combine all ingredients but corn.

Brush corn lightly with mixture; grill, turning occasionally, until some kernels have turned golden brown, 10 to 12 minutes.

Remove corn and brush with remaining chili butter. (This is also good on grilled chicken kabobs.)

Serves: 4 - 6
