Chipotle Pepper Butter

"The smokiness -and fire- of the chipotle is an integral flavor in both Mexican and international cuisine." From Flavored Butters

  • 1 cup unsalted butter, softened
  • 2 tablespoons canned chipotle peppers, undrained
  • 2 tablespoons chopped shallot
  • 1 tablespoon chopped fresh cilantro
  • 1 clove garlic, crushed
  • 1/4 teaspoon salt
 

METHOD

In a food processor fitted with a metal blade, combine all the ingredients and process for about 5 minutes.

Transfer to a fine sieve and work the mixture through the mesh using the back of a ladle. Discard what remains in the sieve.

Suggestions:

Adds extra sharp Mexican flavor to burritos and tacos. Just spread on the tortilla or shell right before filling with your favorite vegetables, meats, and cheeses.

Dolloped on grilled meat and fish, chipotle pepper butter can replace -even outdo- all the other hot sauces you usually sprinkle on.

Try stuffing this butter into the cavity and under the skin of a whole chicken, then roast in an oven preheated to 350°F for about 20 minutes per pound, until crisp and tender.
