Cinnamon-Topped Oatmeal Muffins

  • 1 cup sifted flour
  • 1/4 cup sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 cup oats
  • 1/2 cup raisins (optional)
  • 3 tbsp oil
  • 1 egg beaten
  • 1 cup milk

Cinnamon topping

  • 2 tbsp sugar
  • 2 tbsp flour
  • 1 tsp cinnamon
  • 1 tsp melted butter
 

Method

Preheat oven to 425°F.

Sift together into mixing bowl the flour, sugar, baking powder and salt. Stir in oats and raisins. Add oil, egg and milk. Stir only until dry ingredients are moistened.

Fill greased muffin cups 2/3 full. Sprinkle with cinnamon topping

Bake 15 minutes at 425°F.  A delicious breakfast treat. 

Makes 12 muffins.
