Cardamom Scones

  • 1 1/2 cups flour
  • 1/2 cup oat flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons (or to taste) ground cardamom
  • 4 tablespoons butter
  • 2 eggs, lightly beaten
  • 1/2 cup cream (as needed)
 

Method

Preheat oven to 400°F.

Place the dry ingredients in a bowl and stir to mix. Cut the butter into the flour mixture. Stir in the eggs and add just enough cream to make a stif dough.

Working on a floured surface, tun dough onto a board and pat it into two circles about 1/4-1/2 inch thick. Cut in triangluar wedges and place wedges on a cookie sheet.  Leave a minimum of one inch between wedges. 

Bake in preheated 400°F oven for 15 minutes or until golden brown
