Zesty Cranberry Sauce

Pears are a nice addition to cranberry for the Thanksgiving or Christmas table.  Be sure to get sweet, ripe ones. Also get sweet apples. 

  • 2 cups fresh or frozen cranberries
  • 1/2 cup undiluted orange juice concentrate
  • 2 ripe pears, finely chopped
  • 1 medium apple, finely chopped
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon grated orange rind
  • 1/2 cup raw sugar or other sweetener
 

Method

Combine all ingredients except sweetener in a saucepan, and bring to a simmer over medium heat.

Cook, uncovered, until cranberry skins pop and mixture thickens slightly, about 10 minutes. Taste for sweetness and add sweetener of your choice until it suits your palate.

Serve hot or cold.
