Cranberry -Strawberry Relish

Strawberries for Thanksgiving or Christmas?  Well, why not have something new when doing the holiday cooking? And then enjoy the sweetness that strawberries provide with the tart cranberry. Frozen strawberries are excellent as they are uniformly sweet.  Nice to make that busy holiday kitchen a little less frenetic.

  • 1 (10-ounce) package frozen strawberries
  • 1/2 cup granulated sugar
  • 3 cups cranberries
 

Method

Defrost then drain frozen strawberries, reserving the liquid by draining over a sieve.  Adding water to the liquid to make 1 cup.

In a saucepan, heat the liquid, sugar, and cranberries. Bring to a boil.  When boiling, immediately reduce the heat, and simmer uncovered for 10 minutes. Stir the thawed strawberries into the mixture, cover, and refrigerate until served.
