Cranberry Compote

 
  • 2 cups fresh cranberries
  • Zest of 1 orange
  • 3/4 cup fresh orange juice
  • Juice of 1/2 lemon
  • 1/2 cup currants
  • 1/2 cup granulated sugar
  • 2 cinnamon sticks
 

Method

In a medium saucepan, combine all the ingredients. Cook over medium

high heat until all the berries pop open. After a couple of minutes cooking, a potato masher will help speed the process.  Avoid smashing the cinnamon sticks.

Allow to come to room temperature, then chill in the refrigerator. Leave sticks in for serving as they are attractive.
