Pineapple Corn and Green Chile Relish

For the holidays - Thanksgiving or Christmas or both.

  • 1-1/2 cups frozen corn, thawed
  • 1 (8-ounce) can crushed pineapple, drained
  • 1 (4-ounce) can Ortega Diced Green Chiles
  • 1/4 cup diced red onion
  • 1/4 cup diced red bell pepper
  • 1 tablespoon chopped fresh cilantro
  • 1/8 teaspoon cayenne pepper
 

Method

Dress up your favorite poultry or seafood dishes. This tangy relish is wonderful spooned over grilled or broiled chicken and fish as well as with holiday meats.  Turkey loves it!

Combine corn, pineapple, chiles, onion, bell pepper, cilantro and cayenne pepper in medium bowl. Let stand for 20 minutes for flavors to blend.

Yield: 3 cups.
