Spicy Cherry and Apple Chutney

For the holidays - Thanksgiving or Christmas or both.

  • 1 (16.5-ounce) can pitted dark sweet cherries, drained
  • 1 cup pared, cored and diced fresh tart apples
  • 3/4 cup vinegar
  • 3/4 cup brown sugar
  • 1 teaspoon salt
  • 1 tablespoon minced fresh ginger (or 1 teaspoon ground ginger)
  • 1-1/2 teaspoons finely chopped garlic
  • 1/4 teaspoon crushed red chilies
 

Method

Combine all ingredients in heavy medium size saucepan.  Bring mixture to a boil.  When boiling, immediately lower the heat to a strong simmer and cook, stirring occasionally for 20 to 30 minutes or to the consistency of your own preference.

This can be made ahead.  Store in refrigerator. If you are working far ahead, you can save in freezer-proof containers or plastic bags.

Yield: About 1 cup
