Was it the Arabs who brought the taste of sweet and sour when they conquered Sicily? No records exist, but the guess is a safe one. Vinegar and sugar are the usual two elements, but the playful Italians suit their own taste and may add or replace with other ingredient such as candied citrus, raisins, chocolate,
balsamic vinegar, lemon. Sweet and sour - play with this as you like. The result may not be authentic Italian, but you may find something that you love.
Simmer vinegar and wine till reduced by one third, add sugar, mix well until dissolved, and
remove from fire. (The sugar can be reduced to one tablespoon if less sweetness is desired.)
This sauce goes well with meat, fish, several vegetables, particularly for pearl onions, or
as an addition to beef, venison, or lamb reductions.
