Italian Panforte Recipe

Sentence

  • 1 large orange (peel and 1/4 cup juice)
  • 1 lb. shelled brazil nuts (or almonds) toasted in 400 F oven for 10 min.
  • 8  ounces dried figs
  • 4  ounces pitted dates
  • 3/4 cup dark seedless raisins
  • 2/3 cup sugar
  • 2/3 cup honey
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa
  • 1 teaspoon cinnamon
  • 1 teaspoon coriander (ground)        
  • 1/4 cup confectioner's sugar
 

Method

Preheat oven to 300° F. Line a 9" x 9" baking pan with foil and grease well. (Or use a 9" springform pan).

Using a food processor or a mezza-luna, finely chop the figs, dates and raisins. Place fruit in a large bowl.  Mix in remaining ingredients, except the confectioner's sugar, stirring until well blended. Spoon mixture into prepared baking pan and smooth top lightly with a spatula.

Bake in preheated oven for 1 3/4 hours or until top is dry to the touch.  

Cool on wire rack keeping in pan, for 15 minutes. Sprinkle a clean sheet of foil with half the confectioner's sugar. Invert pan onto foil and peel foil used to line pan. Sprinkle the remaining sugar evenly over the top. Cool completely.

Cut into squares or triangles. Store in tightly covered container. Can be frozen before cutting.
