Roman Recipe for Pears with Honey and Pecorino Cheese

Quintessentially Roman -  the Romans love their sheep-milk cheese, pecorino-romana and they love black pepper.  In Rome it is always freshly ground.

  • 1/2 lb Pecorino- Romano cheese
  • 4 cornice pears, cored and sliced
  • Honey, for drizzling
  • Freshly milled black pepper
 

Method

Slice cheese thinly and divide among 4 plates. Place pears on top of cheese. Heat the honey just slightly and drizzle over pears and cheese. Grind pepper over each plate, and serve. 

Freshly milled pepper required.  When in Rome, do as the Romans do; when not in Rome, do as the Romans do!
