Knowing that families are harried and have little time for cooking, the editors at Pillsbury's have turned attention to putting tasty meals on the table in 30 minutes or less. There are 140 recipes in the revised edition of Pillsbury Fast & Healthy Cookbook with an emphasis on fruits, vegetables, beans and whole grains used with heart-healthy fats and reduced-fat dairy items. According to the editors they "are lower in fat and calories and higher in fiber and nutrients than most recipes."
The chapters are organized around types of meals: Fast and Fun Snacks; Skillet Meals and Casseroles; Meals in 20 Minutes Mex; Fast Family Favorites; Salads and Sandwiches; Hot off the Grill; Sensational Sides; and finally, yes, Sweet Treats - many of them fruit-filled.
You will find quick recipes in every category. There are recipes such as Crispy Shrimp Tarts, Barbecued Pork Fajitas, Lemon-Basil Skillet Chicken with Rice, Rush-Hour Chili, Vermicelli with Fresh Herb-Tomato Sauce, Spicy Chinese Chicken Tacos, Foot-Long Pizza, Colorful Veggie and Tortilla dinner, Grilled Blue Cheese Steak, Halibut with Chipotle Butter, Orzo-Barley Pilaf, Lemon Mini Tarts, Chocolate Espresso Mousse.
To make preparation glide by quickly, many of the recipes used prepared store-bought ingredients. Most are culled from the freezer department which offers flash-frozen vegetables that retain nutrition, or pre-cut meats and vegetables. All recipes have calorie and nutrition data as well as prep times and start-to-finish times.
