Cutie Pies
A traditional homemade pie is one of the most welcomed desserts to put on the table, but Cutie Pies adds creative twists to the classical pie that will delight friends and family. Cutie pies are conversation pieces, as well as delicious treats to be eaten as single servings. The creations of Dani Cone, founder and owner of High5 Pie in Seattle, cutie pies let the cook indulge in baking whims: choose sweet or savory, then choose the size, the shape, even the way of serving that appeals at the moment.
Cutie pies can be made in standard size muffin tins for perfect single-serving size that look elegant on a platter. They can be made as petit 5s, baked in a mini-muffin pan, delicious as a side at any sort of gathering. They can be baked in piejars, a to dig scrumptious gift when wrapped in cellophane and tied with a bow. Dani's pies can be baked as hand held pies, perfect for a potluck or a picnic, and she offers lots of savory fillings so that picnic basket will hold serious treats. Should you want a special treat, one that is guaranteed to win over the younger members of the family, you can make perfect bundles of pie goodness on a stick - pie lollipops.
Divided into six sections, each section covers a particular size of these miniature pastries. Dani advises which type of crust works best for each method of baking. And should you long for a plain old-fashioned pie, Dani has included recipes for regular pies as well, including a very non-miniature "Mile-High Lemon Meringue Pie."
Stating, "the perfect crust defines the perfect pie - it is literally the foundation," Dani begins with a chapter on crusts: All-Butter, Graham Cracker, Vegan, and Gluten-Free. Advising that some crusts work better with a particular shape or filling, all of the pie recipes have a noted recommendation on which crust to use. Lots of crust tips are included, as are suggestions for using pie scraps.
For muffin-sized single servings, Dani has such recipes as a Classic Apple Pie, Pear-Cranberry-Ginger Pie, Black Raspberry. For savory pies, there are such recipes as Good Ol' Mac 'n' Cheese, or Garlic, Potato, and Chive. If you're thinking petit, try pies such as Banana-Blueberry Pudding, Coconut Cream, or Pear, Gruyere, and Prosciutto.
For those giftable piejar pies, there are recipes such as Raspberry Mint Chocolate, Lemon-Blueberry, or Peach-Ricotta Honey. Go savory with Curry Veggie Piejars to serve topped with chutney.
Recipes for handheld 'flipsides,' Dani's update of the classic turnover, include Sweet Potato Pie, and Cran-Apple. There are delicious savory recipes here for Potato, Dill, Cheese, and Veggie, or Broccoli, Cheddar and Mushroom.
And when you want the sweet treat of a lollipop that is really a pie (a perfect party favor for weddings, baby showers, or birthday parties), try Caramel-Pecan Piepops, Double Blackberry Piepops, or Strawberry-Apricot Piepops
Cutie Pies makes baking more fun than ever. They will energize the cook, and grace the table the treats are served on.
